Camping Food – Grilled Breakfast Casserole

We like to camp….a lot…which you can probably tell from how often I blog about it. Unfortunately, we get stuck in a rut when it comes to food. We usually eat well but I am a bit tired of having the same old thing every trip. My whole family loves egg dishes so when I happened across this recipe I knew I had a winner. Everyone loved it. My stepson, Will, ate a TON of it. It will definitely be on the future rotation!

Grilled Breakfast Casserole

Camping Food – Grilled Breakfast Casserole

Ingredients
  • Approximately 500g of frozen hashbrown or 500g of tater tots
  • 8 eggs
  • ¾ cup milk
  • 1 package chicken sausage links, cooked & chopped (or other sausage, bacon or ham)
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup fresh mushrooms, chopped
  • Seasoning salt & pepper to taste
  • ~ 1 cup shredded cheese

Instructions
  1. Heat bbq grill to 350 degrees (ish)
  2. Spray the bottom of a disposable aluminum foil lasagna pan with cooking spray.
  3. Press the hashbrowns or tater tots into the bottom (helps if they are thawed).
  4. Whisk the eggs and milk together in a medium bowl.
  5. Layer sausage, onion, bell pepper and mushrooms onto the potatoes.
  6. Pour the egg mixture over everything.
  7. Season with salt & pepper.
  8. Sprinkle the top with shredded cheese.
  9. Cover pan with aluminum foil and place on the preheated grill.
  10. Cook for 30 minutes or until eggs are set. Remove foil for the last 5-10 minutes so cheese will brown.

Ooohhh…have fun. I’ve never been to Yosemite but I’ve heard it is amazing. If your fam likes eggs, they will love this. Leftovers are easily reheated on the grill too. Just put a piece on a piece of foil.

I think it would be awesome baked in the oven. Grilling it gives it a bit of smokey taste but baked would be good too.

we love to camp too and often eat the same things too. i think its because i know what to pack for it all and that way i don’t forget anything. This looks like it could be somewhat prepared at home and just transferred for cooking so this is going on my list for july. Thanks for sharing and I am really enjoying your blog. Im a newbie.

The food looks great, but it is more suitable for a picnic. How do you expect to pack all that into the back country? Camping food needs to be light and packable, particularly if you are on a three or four day hike or and 8 day canoe trip, which is a typical camping trip.

Hi Dan! Thanks for stopping by! My site is focussed on families with small children. Many of my readers either tent (from their car) or RV camp. Most do not do multi-day day hikes to their campsites. You are totally right that back country camping requires a different requirement for food both in simplicity and portability. Back country campers weren’t really my audience. Definitely give the casserole a try sometime for a picnic if you’d like. I’ve had many great comments from campers saying they love it. :)
