Since our new nanny started, I haven’t been cooking much during the week. Believe me when I say that I am NOT complaining about that. It makes the evenings much more “chill” when I don’t have to rush home to cook dinner. However, I do miss cooking. So….that means that I try to make sure and cook on the weekends. When I asked Dewey what he wanted for dinner, he said “how about spaghetti…or maybe chili?” I know he tried but I am SICK of both of those because we have them so much! So off to allrecipes.com I went to find a recipe I could “fix”. What I found were these delightful honey & garlic meatballs that the whole family raved about when served with mashed potatoes and veggies. These will definitely be back in rotation ASAP.
- 2 pounds lean ground beef
- 1 cup oatmeal
- 2 tsp Garlic Plus (or 1½ tsp garlic powder plus ½ tsp salt)
- 2 eggs
- ¾ cup milk
- ½ cup finely chopped onion
- 6 garlic cloves, pressed
- 1 Tbsp butter
- 1 cup ketchup
- ⅔ cup honey
- 4 Tbsp soy sauce
- Preheat oven to 400 degrees.
- Line 2 cookie sheets with aluminum foil & spray with cooking spray.
- Mix first 6 ingredients together in a large bowl.
- Roll into 2 inch meat balls. Place on cookie sheet 1 inch apart.
- Bake for 25 – 30 minutes or until done through and browned.
- While meatballs are baking, melt butter in a large saucepan.
- Sautee garlic until starting to brown.
- Add ketchup, honey and soy sauce.
- Bring to a boil.
- Decrease heat, cover and simmer for 5 minute.
- Add meatballs to the sauce and simmer for an additional 5 minutes.
- Serve hot.
