You know, I’ve seen layered salads for years but i never gave them a second look. I love salad but I wasn’t sure if I would love this one. When my mother in law asked me to assemble it when we were cooking Christmas dinner, I wasn’t sure what to expect. It was so good. I had seconds and then ate some more the next day. YUM! We only made half of this recipe b/c we had a smaller crowd. It is easier to make as much as you need. Just eyeball the amounts and it works fine. This is a great recipe to take to a potluck or a family dinner.
Layered Salad
Layer the following ingredients in a large bowl in this order:
Assorted Lettuce (about 6 cups or about 1/4 to 1/3 of your bowl)
1 cup celery, diced
6 hard boiled eggs, sliced
1 1/2 cups green peas (eyeball this measurement….can use frozen, just thaw first)
1/2 cup – 3/4 cup chopped bell pepper
8 green onions, sliced – use all the white and a bit of the green
3/4 cup cauliflower, chopped
Dressing – 1 cup Miracle Whip, 1 cup sour cream, 2 Tbsp sugar – mixed together and then spread as a layer
1 cup grated cheddar cheese
8 slices bacon, fried crisp and then crumbled
Recipe notes: Though I rarely, if ever, buy iceberg lettuce, I recommend using a bit of it in this recipe. It has more structural stability and stands up to the layering and doesn’t get slimy or gross even if you refrigerate the salad overnight.

Hmmmm…I would be all over this if I wasn’t firmly Team Mayo. How is the dressing? I would think with miracle whip and sugar it would be quite sweet.
I don’t think it’s sweet especially when paired with the cheese and bacon. I bet you could sub mayo as well.
