What’s Cooking Wednesday – Sauteed Cabbage

Okay…before you think I’m totally crazy for posting a recipe for sauteed cabbage, listen.  Sometimes I get in a veggie rut that I just can’t get out of. Belonging to a CSA (Community Supported Agriculture) makes me want to branch out but sometimes it takes more than want to.  We’ve had two heads of cabbage staring at me for a couple of weeks.  A few days ago I decided that I had to do something about it….and this was the result.

Serves 2 1/2 could easily be doubled and tweaked for personal tastes

1/2 of a small head of cabbage, sliced thinly
1/2 of a red onion, sliced thinly
1 Tbsp butter
2 Tbsp balsamic vinegar
Cooking Spray

Heat a non stick pan coated in cooking spray over medium high heat.  Add cabbage and onions.  Start to saute. When it starts getting dry, add butter.  Keep cooking and add vinegar.  Continue sauteeing until cabbage is tender.  Serve hot.

Recipe Notes: Just remember that it is a-okay to “just wing it”!
