Southern Sunday – Peach Cobbler

This morning Julie van Rosenthal was tweeting about eating pie for breakfast. It sounded like such a great idea and I admitted that I love to eat apple crisp for breakfast. Then she said “What about peach crisp with Liberte Lemon yogurt?” Which made me think “Peaches….Peach Cobbler!” (for those of you who know me…..THIS is why I can’t lose weight. Too many awesome cooks with great ideas that I can’t resist on Twitter) So down to the basement I went for frozen peaches from last summer. And the rest…..is history. I was going to wait to post the recipe until later in the week but I had so many requests for the recipe that I decided I couldn’t wait.

Easy Southern Peach Cobbler
from Southern Living

1/2 cup butter

2 cups sugar, divided

4 cups peaches, fresh or thawed frozen

1 Tbsp lemon juice

1 cup all purpose flour

1 Tbsp baking powder

1/4 tsp salt

1 cup milk

Ground Cinnamon

 

Preheat oven to 375 degrees.  Melt butter in a 11X13 baking dish in oven.  Remove from oven when melted.

Mix flour, 1 cup of sugar, baking powder and salt in a small bowl.  Add milk and mix until just mixed.  Pour batter into baking dish on top of butter.  Do NOT stir.

Bring peaches, remaining 1 cup of sugar and lemon juice to a bowl in a medium sauce pan.  Pour peaches over batter.  Do NOT stir.  Sprinkle with cinnamon.

Ready to go in the oven.

Bake for 40 – 45 minutes until the top of the cobbler is golden brown.

Serve with ice cream if desired.

 

Recipe Notes: I know it seems weird to put the batter on bottom and the peaches on top but it works.  Your cobbler will end up with the peaches on bottom and the biscuity topping on top.  This is the best dessert I’ve ever made.  Ten out of ten.  YUMMMMMMMY!

It’s very easy. It went from start to table in about 45 minutes.

I halved the recipe and made it with frozen (thawed) peaches, mangoes and strawberries. It was so good!
