What’s Cooking Wednesday – Homemade Turkey Sloppy Joes

by Merry on September 14, 2011

I’m always looking for new big kid approved recipes to serve on weekends when we have Will & Nicole. Bonus points if I have the ingredients in the pantry and/or freezer.

Homemade Turkey Sloppy Joes

Homemade Sloppy Joes
from Rachel Ray

1 – 1 1/2 pounds of lean ground turkey
~1 Tbsp olive oil
1 Tbsp poultry seasoning (or a mix of equal parts sage, thyme & marjoram)
Salt & Pepper
1 small onion diced fine
1/2 a large bell pepper (yellow or red) diced fine
2 cloves garlic, minced
1 cup tomato sauce
3 Tbsp soy sauce
2 Tbsp apple cider vinegar
2 Tbsp brown sugar
1/4 cup maple syrup
1 heaping Tbsp grainy mustard
8 hamburger buns

Heat the olive oil in a large skillet.  Add the turkey and poultry seasoning.  Cook until browned while chopping the turkey to make sure it isn’t clumped.  Add onion, bell pepper and garlic.  Cook until veggies are soft.

In a small bowl mix the tomato sauce, vinegar, brown sugar, syrup and grainy mustard.  Pour over the meat mixture and then simmer for 5-10 minutes.  Serve on hamburger buns & enjoy!

Recipe Notes: Dewey and Will both loved these.  Evan….not so much.  I actually heard myself saying “Evan! You can’t just eat VEGETABLES!” Yeah. That.

Don’t forget to head over to Shan’s to see what else is cooking this Wednesday.
