I have been trying to get back on the meal planning and cooking band wagon. I’ve actually done pretty good this week. Yay Me! This recipe is super YUMMY and a great kid friendly way to sneak in some veggies.
Chicken Peanut Noodles
Adapted from Recipes from the Cookie Jar
1/2 regular size box of spaghetti noodles (I used Catelli Smart)
2 boneless, skinless chicken breasts, sliced
1/3 cup hoisin sauce
1/4 cup peanut butter
2 Tbsp apple cider vinegar
1/2 cup water
1 clove garlic, minced
1 1/2 cup bean sprouts
1/2 yellow bell pepper, sliced
1/2 red onion, thinly sliced
7 or 8 brocolli tenders, chopped (or 1/2 head brocolli cut small)
1/4 cup roasted peanuts, chopped
Cook pasta according to package directions while following the steps below.
Cook chicken in a large frying pan over medium heat. You can use olive oil or Pam. When chicken is cooked through, remove it to a bowl. Keep warm.
Add another dab of oil or Pam to the frying pan. Add bean sprouts, bell pepper, onion and brocolli. Stir fry until tender crisp.
Mix hoisin sauce, peanut butter, vinegar, water and garlic in a small bowl.
Add chicken to vegetables in frying pan. Drain the noodles & add them to the frying pan. Add the hoisin/peanut butter mixture to the pan. Mix well. Add the roasted peanuts and serve.
You may want to offer Sriracha hot sauce at the table so that everyone can add heat to their liking.
Recipe Notes: This recipe will knock your socks off! I changed the recipe a bit to add more veggies and to cook them a bit more. I think this makes it a bit more kid friendly.

I love this recipe Merry! I actually made something similar last weekend, but I grilled everything on the barbecue while I cooked some rice noodles inside then tossed it all together. Yum. And the serving size to points ratio was fantastic!
This was the other recipe I tried…yummy. I will make it again definitely. I might try it with tofu.
