What’s Cooking Wednesday – Buffalo Chicken Dip & Spinach Cheese Squares

First off….a big shout out to Cate over at Sweetnicks! She is my first “go to” when I’m looking for a new recipe. She also had a great writing style with lots of pictures of her two cutie kidlets Madeline & Nick. Both of the recipes I’m posting tonight came from her site. Go check her site out…..I’ll wait.

Okay, back now? Good! I made both of these appetizers for our Super Bowl watching party/birthday party. Both went over really well & I will definitely make both of them again. Since I haven’t posted about our get together, I’m going to post some of those pictures too.

Buffalo Chicken Dip
from Rachel Ray by way of Sweetnicks

  • 8 oz brick of lite cream cheese
  • 2 cups cooked chicken, shredded or chopped (I baked 2 chicken breasts & chopped them up)
  • 1/2 cup buffalo wing sauce (I used Frank’s Buffalo Wing Sauce (not hot sauce))
  • 2 Tbsp butter, melted
  • 1/2 cup bleu cheese crumbles
  • 1/4 to 1/2 cup mozzarella cheese

Preheat oven to 300°F. Spread cream cheese in a shallow casserole dish or ceramic pie plate. Mix buffalo wing sauce & butter. Pour over chicken and mix well. Pour chicken/wing sauce mixture over cream cheese. Sprinkle on bleu cheese crumbles & then the mozza (just a thin layer or it will be hard to dip). Bake for 20 minutes or until mozzarella is melted. Serve with tortilla chips or scoops.

Recipe Notes: Two thumbs up. So, so, so good! Yum!

Spinach Cheese Squares from Sweetnicks

  • 3 eggs
  • 1 cup flour
  • 1 cup milk
  • 1 tsp baking powder
  • 1 pound cheddar cheese (I just guestimated b/c I wasn’t sure how much a pound was living in Canada and all)
  • 2 packages of frozen chopped spinach, thawed & squeezed dry (the square packages)
  • 1/4 cup onion, chopped fine

Preheat oven to 350°. Spray a 9X13 pan with cooking spray. Set aside.

In a large bowl, beat eggs well. Add flour, milk & baking soda. Mix well. Add cheese, spinach and onion. Mix well. Pour into pan. Bake for 35 minutes. Let cool at least 45 minutes before cutting into squares.

Recipe Notes: This reminded me of a crustless quiche. They turned out very tasty (much tastier than the look in my opinion).
