I’m running my company’s Bake Sale to raise funds for United Way tomorrow. I love bake sales! So many yummy treats and I get to bake! I love to bake but I realize that we don’t need a mound of sweet treats laying around the house (mostly b/c I’ll eat them). Some of the ladies at work will go all out (Angela, if you’re reading this….I mean you) but I’ve decided to stick to a few tried and true treats. There are about 20 people bringing things so it should be great!
My treats for this year are: Cranberry Banana Loaf, Puffed Wheat Squares and Ultimate Chocolate Chip cookies. The first two are old favorites but the cookie recipe is new. Since I’ve been baking all day & I have a backlog of recipes to use for “What’s Cooking Wednesday”, I figured I could post an extra recipe this week. These cookies are AWESOME!
Ultimate Chocolate Chip Cookies from Sweetnicks
3/4 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
2 large eggs
1 1/2 tsp vanilla extract
2 1/4 cups plus 2 Tbsp flour
1 tsp baking soda
3/4 tsp salt
16 oz chocolate chips
Preheat oven to 350°F. Beat butter and sugars until creamy. Add eggs and vanilla, beat until blended. Combine flour, soda and salt in a small bowl. Slowly add to the butter mixture beating well. Stir in chocolate chips. Drop by tablespoons onto lightly greased baking sheets. Bake for 8-9 minutes for soft gooey cookies or up to 14 minutes for crispier cookies. Remove to wire racks to cool completely. Makes about 40 cookies.
Recipe Notes: I didn’t change anything since this was the first time I made these. I did notice that it took longer for them to get done that the recipe said but that could be the altitude in Calgary. I used semi-sweet Chipits. Two big thumbs up from me & Dewey. These are super chocolately and very, very yummy!
Of course, I can’t take all my treats to work. Evan would fire me as his mommy. He got to choose whether to have a “treat” (puffed wheat square) or a cookie. He decided on a “treat”. I handed him one & he immediately said “sticky!” and made a face. I made him do it again so I could get a picture. He is such a character! Don’t be fooled by the face….he ate the whole treat and asked for more!
Now to go and wrap up the cookies before I eat any more of them!

I love bake sales! The perfect opportunity to try out new recipes, and goodness knows, my stack of to-try recipes is big enough! Glad the cookies were a hit!
