What’s Cooking Wednesday – Salmon with Brown Sugar Glaze

Not the best picture….so sue me. :) I always forget to take a photo until after it’s been manhandled a bit. This recipe is super easy & yummy!
Salmon with Brown Sugar Glaze
from Make It In Minutes Weight Watchers cookbook
1/4 cup packed light brown sugar
2 Tbsp Dijon mustard
2 Tbsp chopped fresh dill or 2 tsps dried
4 (6 ounce) salmon filets, skinned
1/2 tsp salt
1/2 tsp coarsley ground black pepper
1. Spray the rack of a broiler pan with nonstick spray; preheat the broiler
2. Whisk together the brown sugar, mustard and dill in a small bowl. Sprinkle both sides of the salmon with salt and pepper. Place the salmon on the broiler rack and spoon the brown sugar glaze on top. Position 7 inches from the heat and broil until lightly browned and just opaque in the center, about 6 minutes.
Serves 4
Recipe Notes: This recipe was a hit with both Dewey and I. It is just so good. I served it with white rice and asparagus. I ended up cooking this longer than 6 minutes. I just kept an eye on how done it looked and made sure it flaked at the thickest part.
