What’s Cooking Wednesday – Balsamic Chicken and Pears

My mom found this recipe online at www.quickandsimple.com. We made a few changes but it turned out great! We served it with mixed veggies & quinoa. This was my first time trying quinoa & I really liked it. I made it with chicken broth instead of water. Quinoa is quite healthy with 3 grams of fiber and 6 grams of protein per serving.

Balsamic Chicken and Pears

2 tsp vegetable oil
4 small boneless, skinless chicken breasts (we used 8 boneless skinless thighs)
2 Bosc pears, unpeeled, each cut into 8 wedges
1 cup chicken broth
3 Tbsp balsamic vinegar
2 tsp corn starch
1 1/2 tsp sugar
1/4 cup dried cherries (we used craisins instead)

  1. In non-stick 12-inch skillet over medium-high heat, heat 1 tsp vegetable oil. Add chicken and cook 8 to 10 minutes, turning once, until juices run clear when pierced with tip of knife. Remove chicken to bowl.
  2. In same skillet, in 1 tsp of oil, cook pear wedges until lightly browned and tender.
  3. In cup, mix chicken broth, balsamic vinegar, corn starch and sugar until blended. Add chicken broth mixture and dried cherries to pan & bring to a boil. Boil for 1 minute. Return chicken to pan and warm through.
