Mini Meatloaves from Allrecipes.com
Ingredients:
1 egg
3/4 cup milk
1 cup shredded Cheddar Cheese
1/2 cup quick cooking oats
1 teaspoon salt
1 pound ground beef
2/3 cup ketchup
1/4 packed brown sugar
1 1/2 teaspoons prepared mustard
I added: 1 carrot shredded, 4 fresh mushrooms diced & 1/4 of a medium onion diced.
- Preheat oven to 350°.
- In a large bowl, combine the egg, milk, cheese, oats & salt. Add the ground beef (and carrot, onion and mushroom), mixing well. Form this mixture into eight miniature meatloaves. Place these in a lightly greased 9X13 baking dish.
- In a seperate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
- Bake, uncovered for 45 minutes.
This recipe gets 5/5 for both Dewey and I. I recommend making the mini meatloaves because it allows a higher sauce to meatloaf ratio which is key.
